It makes sense that he would bring some of those flavors to his brewery, Band of Bohemia, in Chicago, especially where the winters could use a bit of warmth.  \n\nPink peppercorns, the dried berries of the Brazilian pepper tree,  are a hearty ingredient, Carroll says, and add a spicy floral note to beer. It’s why he found them the perfect complement to a [rye beer](https://beerandbrewing.com/band-of-bohemia-guava-pink-peppercorn-rye-recipe/), one that already has a touch of spice. For the beer he makes, he adds guava—pink with pink he says—because when you ferment guava, all the sweetness goes away and you’re left with a tart, funky, Caribbean terroir on the back note, a “jungle note.”  \n\nThen, Carroll uses a German yeast, but with the ingredients, the beer winds up tasting more like a saison. So, some might call this a fruit beer, or a spiced beer, or try to put a style on it, but ultimately, Carroll  just calls it a rye.  \n\nThe pink peppercorns are added at 20 minutes before the end of the boil, and that helps them become more “of a back note as opposed to using a tincture, where you get a little more dusty peppery. This washes some of that out, and the yeast takes out that papery note,” says Carroll. He says the pepper flavor would be too abrasive if added in the mash.  \n\nPink peppercorns are available at most grocery stores in the spice aisle. Thanks to its floral nature, it can also work well with other fruits in beers, such as passion fruit, pink grapefruit, or even mango.  \n\nWhile commonly found in saisons,  it can be used in many other aromatic styles.",

To that end, we spent a little time kicking back, enjoying a cold one or two, and pontificating the ways crypto could influence our world of craft beer and media. \n\nWhat we want to do is lay out a few of our thoughts and solicit the community for informed feedback and ideas. With that feedback, we might pursue a venture or two into the crypto world within our sphere of influence and expertise - again, beer and media. Now on to some thoughts:\n\n- The craft beer industry is the most collaborative, consumer-driven industry there is. People inside and outside of the industry want to support the industry, be a part of the industry, and potentially own some of the industry.\n\n- Consumers would love to help craft brewers while seeing a return on their investment through higher valuation for the coin. Then potentially spending that coin on more beer.\n\n- It is extremely expensive to open a brewery. Many businesses have to take out high-interest loans in order to finance their dream. Most breweries cost between $300k-$700k to open, not including the land they are built on or the salary that the owners would like to be taking. Is there a way that we can remove some of the banks from the equation to allow owners to directly pay down principal.\n\n- The craft beer industry is moving in the direction of hyper-local. While we see slowing gains or declines from some of the larger brands, smaller brands with a quality product are thriving. \n\nIs there room for a Craft Beer Coin or (Craft) Beverage Coin to support this industry? Could it be structured with an ICO between $10M-$100M with the allocations being something along the lines of 50% to new brewery growth, 40% to replace high-interest loans with 0% interest loans (if someone defaults we would sell the assets and provide them with their share based on equity percentages), and potentially 10% of the fund dedicated to launching our own breweries? Coin owners would have a backed asset that would grow with the craft beer industry, with the long-term potential to have breweries accept the coin as payment for beer.\n\nFrankly, I'm not sure if it's a good idea. It's certainly a fun idea. I know that we could assemble a team that could manage this type of asset pool. With the Craft Beer & Brewing owners spearheading it, we could work with our equipment, ingredient, legal, construction, and brewing partners, who are experts in the field of launching and growing breweries.\n\nWe are by no means crypto experts, yet.       "body": "Our Editorial Director talks about the importance of independent media in an age where the lines are blurred.\n\n![Bogner-Portrait-2912.jpg](https://steemitimages.com/DQmdh8hcMpLtAoXpx5E1qScxMzPaY1nBr99yNT2fj2x4ysi/Bogner-Portrait-2912.jpg)\n\nRecently, the Brewers Association (the trade group that represents the interests of craft brewers in the United States, for those who aren’t familiar) rolled out a new symbol for member brewers that fall under their definition of “craft” to use to differentiate themselves from non-craft breweries owned by AB-InBev, MolsonCoors, and friends.\n\nIt’s a move I applaud and support wholeheartedly, even if the aesthete in me wishes the logo design were a bit more compelling. You can’t always get what you want, but at least we’ve got what we need.\n\nThat symbol got me thinking—where’s the corollary for independent craft beer media? Do we need one? How do craft beer enthusiasts and even professional brewers themselves know when that website or blogger is a trustworthy and independent source of information, or part of a network paid for by big beer to further their own interests?\n\nThis is not a theoretical discussion, it’s a very real one. Sites like AB-InBev’s “The Beer Necessities” blog appear to be perfectly useful and serviceable media sources, covering a wide range of topics, and even showcasing actual craft breweries in an effort to build a connection to the real craft community. October, a “joint venture” between AB-InBev’s venture capital arm ZX Ventures and Condé Nast’s Pitchfork Media Group is similar in its scope covering the entire world of beer.\n\nI don’t pretend to know what their end game is, but at some point you have to ask yourself whether it’s a good thing for one of the largest beer conglomerates in the world to also control significant media channels. The 16-year-old punk rocker in me bristles at the idea, and the 40-something media veteran in me isn’t as excited by the idea, either.\n\nBut back to the question of independence—if you think it’s a good thing that independent beer has independent media, then you have to support it, or it will go away. We’ve just seen one of our contemporaries, Draft Magazine, announce that they’re ceasing publishing the print magazine. There may be a few dominoes in the media market yet to fall (don’t worry, we’re sticking around). But one thing above all else is true—if independent craft breweries don’t support independent craft beer media, then all that will ultimately remain are those craft beer media sources funded by big beer.\n\nThat’s not a future we want to see, so we hope you’ll get out there and support those independent craft breweries that support us, subscribe to the magazine, and practice the same level of discernment when you consume media or share social stories on the web as you do when you’re buying beer on the shelf from your favorite retailer.\n\nJamie Bogner \nCofounder & Editorial Director \n*Craft Beer & Brewing Magazine®*",
