INGREDIENTS 1-2 tbsps coconut or grape seed oil (or any cooking oil) 4-5 pieces red/green okra, cut into 1 inch pieces 10-15 pieces string or green beans, cut into 2 inch pieces 1/2 medium yellow onion, sliced 3-5 pieces garlic, crushed and sliced half of 1 portabello mushroom, sliced into 1/4 inch strips then sliced into 3 1/3 of a block of firm tofu, cut into 1/2 inch stripes then cut in half 2 bay leaves 4-5 peppercorns 1/3 cup coconut aminos, tamari or soy sauce 1/4 cup water 1/4 cup apple cider, cane, or white vinegar INSTRUCTIONS 1. Wash and steam the okra for 5 minutes, set aside. Wash and snip off the ends of the string beans. 2. Heat a skillet over medium-high heat. Add cooking oil. Once hot, fry the tofu on each side until golden brown, then set aside. Fry the portobello mushroom pieces for 30 seconds per side and set aside. 3. Using the same skillet, add 1 tbsp cooking oil and heat. Add the onions and saute until translucent (do not brown). Add the garlic, stir and sauce for 1 minute until fragrant. Add pinches of salt and pepper to taste. 4. Place the tofu and mushrooms back into the pan. Add the rest of the ingredients (except string beans), stirring frequently until the sauce starts to boil. Let cook for 2-3 minutes. 5. Lower the heat to medium-low and add the sting beans. Stir well, and let simmer for 4-5 minutes until the string beans are cooked. 6. INGREDIENTS slices day-old, refrigerated gluten-free bread (or your choice of bread), sliced into 3 3/4 cup almond milk (or coconut, rice, soy milk) 1 tbsp maple syrup 2 tbsps coconut flour (or other gluten-free flour) 1 tbsp nutritional yeast, optional 1 tbsp coconut sugar 1 tsp cinnamon 1/4 tsp freshly ground nutmeg pinch of salt coconut oil, for pan-frying INSTRUCTIONS 1. In a small bowl, whisk together the almond milk, maple syrup, flour, nutritional yeast, coconut sugar, cinnamon, nutmeg, and salt. 2. Dip the bread slices one by one (or more) into the liquid mixture. Make sure all sides are coated evenly. 3. Heat a drizzle of coconut oil in a large skillet over medium heat. Portugal has a strong commitment to renewable energies in order to be more sustainable. Last year we already had a whole month to be powered only by wind energy. INGREDIENTS 5 salted egg yolks, steamed and mashed 3 tablespoons butter 2 garlic gloves chili flakes (depends on the desired amount) ½ kilo shrimp, peeled spaghettini pasta 1 cup pasta water salt black ground pepper 60ml all purpose cream 2 tablespoons sugar fried tinapa bits INSTRUCTIONS Cook pasta and set aside pasta water. Melt butter. Add garlic and wait until golden. Add salted egg yolks. Mix well. Add sugar, chili flakes, peel prawns. Mix well. Pour a cup of pasta water. Wait for the sauce to boil and thicken. Make sure prawns are well-cooked. Season with salt if necessary. Add all-purpose cream. Mix well with the cooked pasta. Season with ground pepper. Transfer to a bowl and sprinkle with tinapa bits.
